Vegan Strawberry Shrub Cake

This cake is so easy and uses only a few ingredients for a super moist and springy cake, no butter, eggs or milk required in this tasty treat! It rises without eggs because the vinegar in our shrub reacts with the baking soda to give it a lift!

 

Cake Ingredients:
1 3/4 cups (210g) flour
1 tsp baking soda
1 cup (200g) sugar
1/4 teaspoon salt
4 tsp Strawberry + Basil + Peppercorn Shrub
6 tbsp vegetable oil 
1 cup water/fruit puree 

 

  1. Preheat oven to 350 degrees
  2. Grease a round cake pan + cut a piece of parchment paper to size for the bottom of pan (this cake tends to stick so don’t skip this step)
  3. Whisk together flour + baking soda + sugar + salt
  4. Make 2 indentations in the dry mix + pour the shrub into one and the oil into the other 
  5. Pour the water on top + mix until well combined
  6. Bake for 35 minutes + allow to cool completely before adding frosting, fresh berries and basil

 

    Frosting Ingredients:
    1 1/2 cups powdered sugar
    6 tbsp dairy-free butter/margarine
    3 tsp Strawberry + Basil + Peppercorn shrub 

     

    1. Cream powdered sugar with vegan butter
    2. Slowly add shrub while mixing on high until frosting holds stiff peaks

     

    *Skip the frosting and add chopped fresh berries to the batter to make muffins!
